The first thing I noticed about this "cheese" is the texture. It has a really nice, soft texture that is easy to cut as well as melt. This might not sound like much, but this is a huge deal for veggie cheese substitutes. Most have strange textures, don't melt at all (sort of worrisome really), and are all around weird. Like all cheese alternatives, this one does not have a strong cheddar taste, but at least it doesn't taste really weird, which is a huge step in the right direction. I made macaroni and cheese with this and was happy with how it turned out. This is one of the most healthful cheddar options I have found, as it is relatively lower in sodium (but still out of control) and does have some fiber in it. However, you miss out on all of the calcium that real dairy cheddar provides.

All natural, fat free cheese is a pretty rare find. So when I found this fat free, lower calorie all natural cheese, I really wanted to love it (given that it would be so much better for me). Well, I didn't hate it...it was just totally blasé. Like someone had forgotten to add flavoring to a perfectly pleasant block of cheese. That being said, when this cheese is mixed in with other ingredients it works well. It melts nicely, and there are many other varieties now that might be more flavorful.
